Abstract
The available methods to determine dietetic fiber are very extensive in the literature. They are classified in three groups: raw fiber, detergent and enzimatic. The advantages and desavantages of such methods are discussed. The need to select an enzimatic method wich will be realiable, rapid and simple still exist. Also, methods that allow the fragmentation of the fiber into its main components are important when it is necessary to study their specific physiologic effects.
